It’s the season for Thai honey mangoes! Yay :D I’ve been taking advantage of these cheap and good fruits to make (& experiment) various desserts :)
I blogged about a recipe for mango-banana-coconut milk popsicle some time ago here. Just a few days ago, I added nata de coco to the popsicle and it gave a nice chew to the eating experience. I added about one tablespoon of nata de coco cubes into each popsicle mould, poured the blended fruit puree in, and then used a chopstick to give the mixture a good stir before freezing.
Our girl could finish a popsicle in one seating now. And she surprised me by saying that “ice cream is healthy…it is good”. I think she was quite right! :)

I still remember the taste of the Thai honey mango you bought years ago at a street-side market on East Coast Rd (near 328 Katong Laksa). Mmm!
Ah, those mangoes must be on your list of foods to eat when you come over! :D I hope that they would still be sweet and fragrant in June. :)
What a great idea and it really looks yummy!! We did buy the honey mangoes but Gabrielle seems to prefer slightly sour stuff like oranges. Oh yes we did bring her to the dentist recently; must share that experience with you soon.

Good to hear from you again! How’s everything with no. 2 in the picture? Indeed, all babies are different :D Gabrielle might take to the popsicle if you add some plain yoghurt or squeeze a little fresh orange juice to the mix before freezing.
