And finally, mommy found the energy to make pancakes at home for breakfast. Ya, I’m such a bum in the mornings (Yang is nodding vigorously).
Recently, Hannah’s godmother (my best friend, Doreen) came by to visit on her birthday and passed me a pack of Japanese pancake premix. Brand is Moringa. Preparation is easy peasy. Just mix milk and egg together in a measuring jug and then add the premix powder and stir until a smooth batter is obtained. Let the batter stand for a few minutes (I read somewhere that this helps the pancakes to rise better) and then pour a small portion to form a nice round circle on a small frying pan. Add slices of banana onto the pancake batter and then wait for bubbles to appear in the batter before flipping over to cook the other side. Repeat until all the batter is used up. Serve with butter and maple syrup. Yums! :D

You can do that with any pancake mix. Some only require you to add water

@ Sam: Indeed. I had always wanted to make the pancake batter myself instead of using those commercially available. That’s why I feel so lazy at the thought of doing it in the morning…but now that I have undergone the process of using a premix, I’m ready to make my own homemade pancakes. Ha ha! :D
Oh, I meant you can do the same with any pre-mix in the stores, not just that Japanese brand. ;D I’ve done pancake my own way as a little kid, but it’s never as fluffy as the premix. But my brothers loved it all the same.!

If you do not like to use those commercially available premix, Nigella has a pancake mix recipe where you can mix all the dry ingredients together and store them in a container, just add egg and milk as per any premix when you want to cook them. You may wish to give it a try. :)
